An initiative created for taste and enjoyment along with gut care. An Asian style waffle designed to be crispy on the outside and gooey on the inside. A taste resembling my childhood craving for banana sticky rice wrapped in banana leaves. 

More importantly, this friendly version batter and  naturopath approved for breakfast, snack or dinner. Ingredients are certified organic or bio dynamic wherever possible and sustainably sourced in Australia wherever possible. There is no derivatives sources of flour. 

Banana Waffle Cake:


Preparation 5 minutes - Cooking time 15-20 minutes

1 Bag of Soklay’s Dessert Batter

2 ripe banana (mashed)

1 can (400mls) coconut cream or milk (cream is slightly thicker therefore 25mls of extra water may be needed)

1 cup (250 mls water)

¼ - ½ cup sweetener of your choice (eg coconut sugar)

*Based on Ayurvedic principles do not use honey in cooking it can be toxic for the body

1 teaspoon of vanilla essence (optional)

*To make it extra delicious add 1 cup of (vegan dark choc chip) my fav!


1/. Combine batter with coconut cream/ milk, water, banana, coconut sugar, vanilla essence using a hand beater, combine until smooth.

2/. Pre-heat waffle maker on medium heat (personal preference on texture depends on settings).

** No Waffle Maker no worries ** heat coconut oil on non-stick pan, take preferred portion then cook on pan on low heat until golden brown. Flip once only. Another way to keep shape is to use a non-stick or silicon egg ring.


3/. Cooled and separate on a cooling rack, then layer them by layer by stacking them to form a round cake.
