Banana Waffle Cake:

Preparation 5 minutes - Cooking time 15-20 minutes

1 Bag of Soklay’s Dessert Batter

2 ripe banana (mashed)

1 can (400mls) coconut cream or milk (cream is slightly thicker therefore 25mls of extra water may be needed)

1 cup (250 mls water)

¼ - ½ cup sweetener of your choice (eg coconut sugar)

*Based on Ayurvedic principles do not use honey in cooking it can be toxic for the body

1 teaspoon of vanilla essence (optional)

*To make it extra delicious add 1 cup of (vegan dark choc chip) my fav!

 

1/. Combine batter with coconut cream/ milk, water, banana, coconut sugar, vanilla essence using a hand beater, combine until smooth.

2/. Pre-heat waffle maker on medium heat (personal preference on texture depends on settings).

** No Waffle Maker no worries ** heat coconut oil on non-stick pan, take preferred portion then cook on pan on low heat until golden brown. Flip once only. Another way to keep shape is to use a non-stick or silicon egg ring.

 

3/. Cooled and separate on a cooling rack, then layer them by layer by stacking them to form a round cake.
